I’ve seen all kinds of reactions during food hygiene inspections… nervous laughs, awkward jokes, even the odd sigh or eye roll.

But this one really surprised me.

It was a small kiosk selling hot drinks, cakes, and crepes. Low-risk food, simple setup, just one person on shift. I introduced myself, explained I was there to carry out a routine inspection… all normal so far.

Then, out of nowhere, the team member said they needed to close the shop and leave.

And then, just like that, the lights were off and the door was shut. They were gone.

It took me a moment to process what just happened.

Later, I spoke to the manager and arranged another visit. When I returned, the same team member was there, still looking a bit uneasy. But once we chatted through the process and I involved them in what I was doing, they relaxed a bit. By the end, they realised I wasn’t there to catch them out.

If your team panics when they see an Environmental Health Officer (EHO), it’s usually a sign they’re not confident about what’s expected of them. A well-trained team won’t feel the need to flee at the first sign of an inspection.

✔️ Stay organised and maintain good routines to avoid last-minute stress when the EHO visits.
